Recipe: Jerk Fish

For this recipe I love to use red snapper or parrot or goat fish.

Ingredients


·        1large onion (chopped)

·        3 Sticks of scallion (chopped)

·        3 -5 Strings of thyme

·        Few crush pimento seeds

·        2 garlic cloves, grated

·        1 teaspoon paprika

·        2 teaspoons sugar

·        1 tablespoon white wine vinegar

·        2 tablespoons oil

·        3 teaspoon butter

·        1 scotch bonnet pepper (Optional)

·        Salt to taste


Directions:


·        Clean fish and dry with paper

·        Combine all the ingredients together

·        Marinate fish for at least an hour

·        Place some of the seasoned ingredients inside the fish

·        Place fish on grill and cook for 20 minutes – 10 minutes on each side
